Safe Food Temperatures: Cook Food Thoroughly

Cooking food to the correct temperature is the most crucial aspect of food safety. Undercooked food can harbor harmful bacteria, so always use a food thermometer to check internal temperatures.

Here are the recommended internal temperatures for the most common ingredients:

  • Poultry (Chicken, Turkey, Duck): 165°F (74°C)
  • Ground Meats (Beef, Pork, Lamb, Veal): 160°F (71°C)
  • Beef, Pork, Lamb, Veal (Steaks, Roasts, and Chops): 145°F (63°C) with a 3-minute rest period
  • Fish and Shellfish: 145°F (63°C)
  • Eggs: Cook until yolk and white are firm
  • Leftovers: Reheat to at least 165°F (74°C)
  • Vegetables: Cook until tender (140°F/60°C or higher)

Always insert the thermometer into the thickest part of the meat, avoiding bones. For poultry, check both the thickest part of the breast and the innermost part of the thigh.

Fire Safety

  1. Stay Alert: Never leave the stove or oven unattended while cooking.
  2. Turn Off Heat Sources: Always switch off burners and ovens when you're done cooking.

  2. Freezing Leftovers: If leftovers won’t be used within 3–4 days, freeze them. Always label frozen items with the date.
  3. Defrost Safely: Thaw food in the fridge, microwave, or under cold water. Never leave food out to thaw on the counter.
